From the loin, boned and tied, Noisettes make lovely small roasts. Or for a quicker preparation, slice into medallions and quickly pan fry on high heat. Serve pink in the middle. Crispy roast potatoes and a little mint jelly make a marvellous pairing.
Keep refrigerated. Can be frozen for up to 6 months. Defrost in refrigerator for 24 to 36 hours until completely thawed. Prepare once defrosted.
