Lamb shoulder is a very flavourful cut due to a slightly higher fat content throughout. It can be slow roasted on or off the bone. Rolled lamb shoulder is ideal for pot roast or try stuffing with strong, pungent ingredients like anchovy, garlic, thyme, and rosemary.
Keep refrigerated. Can be frozen for up to 6 months. Defrost in refrigerator for 24 to 36 hours (or longer for larger roasts) until completely thawed. Prepare once defrosted.
