Pork fillet, taken from the loin just opposite the ribs, is a lovely and delicate cut. Much like beef fillet, it is extremely tender and lends itself well to all manner of cooking techniques. It works just as well cooked whole on the BBQ with a dry spice rub as it does butterflied, stuffed, rolled and roasted.
Keep refrigerated. Can be frozen for up to 6 months. Defrost in refrigerator for 24 to 36 hours until completely thawed. Prepare once defrosted.
