From the end of the leg, this cut is meant for long slow cooking. The pronounced lamb taste holds up well to strong flavours like red wine, garlic, hearty stocks, and a variety of spices and fresh herbs. Generally, one shank per person is just the right portion.
Each shank weighs approximately 350 to 450g.
Keep refrigerated. Can be frozen for up to 6 months. Defrost in refrigerator for 24 to 36 hours until completely thawed. Prepare once defrosted.
