Venison Rolled Haunch Roast

Venison is a highly nutritious and sustainable. High in protein and iron and low in fat, its wonderful flavour is hugely popular whenever it's available, but particularly in the festive season. It feels luxurious and decadent but we should all be eating more of it, and luckily it is readily available from Balgove for most of the year.

Our Christmas venison is wild Roe from our farm and other estates in Fife and wild Red Deer from the Isle of Mull. This helps to reduce the large population size and ease pressure on the environment and biodiversity on that incredible Isle. 

Haunch of venison is a great turkey alternative, and is incredibly versatile. It is best served slightly pink, and is also delicious thinly sliced and served cold.

Remember to rest joints after cooking to relax and retain tenderness and moisture.

Keep refrigerated. Can be frozen for up to 6 months. Defrost in refrigerator for 24 to 36 hours until completely thawed. Prepare once defrosted.
