From the thigh of the animal, the Topside is one of the best choices for roasting. The topside shows off the benefit of our longer hanging time, with a full and developed flavour. This joint comes barded and tied, ready for slow roasting and is equally good served pink or cooked right through. For the best results, be sure to wrap with tin foil and rest at least 15 minutes after cooking. The leftovers make for a lovely beef sandwich.
Keep refrigerated. Can be frozen for up to 6 months. Defrost in refrigerator for 24 to 36 hours (or longer for larger roasts) until completely thawed. Prepare once defrosted.
