It feels luxurious and decadent but we should all be eating more of it, and luckily it is readily available from Balgove for most of the year.\u003c\/p\u003e\n\u003cp\u003eOur Christmas venison is wild Roe from our farm and other estates in Fife and wild Red Deer from the Isle of Mull. This helps to reduce the large population size and ease pressure on the environment and biodiversity on that incredible Isle. \u003c\/p\u003e\n\u003cp\u003eLoin of venison is the finest cut available for roasting but is quite small. It comes from the 'saddle' which means the muscles here do less work and this means the meat is exceptionally tender.\u003c\/p\u003e\n\u003cp\u003eIt is best served pink. Can also be sliced into steaks for a special quick supper, or into strips for a sumptuous stroganoff.\u003c\/p\u003e\n\u003cp\u003eRemember to rest after cooking to relax and retain tenderness and moisture.\u003c\/p\u003e\n\u003cp\u003eA whole venison loin is approximately 1.2kg in weight. Can be frozen for up to 6 months. Defrost in refrigerator for 24 to 36 hours until completely thawed.
